Sautéed Scallops- Scallops 2# Small Onion (chopped) 3 cloves Garlic Crushed Lemon-Zest 1/2 lemon Olive Oil 3 TBS 1 TBS Cooking Sherry Small Jar Roasted Red Pepper Sliced
Sauté above ingredients for 2-3 minutes in hot pan. Cool to 1/2 done. Remove from pan and add to Alfredo to finish. -------------------------------------------------------------- Alfredo Sauce- 1 Qt Heavy Whipping Crea 1 Stick Butter Lemon Juice from Zest 1/2 Cup Parmesan Cheese 1/8 Cup Parsley-Chopped
Combine above Alfredo Sauce ingredients. Simmer over low heat. Add extra milk or corn starch for desired thickness. Serve over Spinach Fettuccini.
